
Ingredients:
8 pork or mutton tripe and trotters
300 g sugar beans
5 tbsp white vinegar
1 tsp sugar
2 whole cloves
1 tsp ground coriander
1 tsp ground all spice
1 onion, finely chopped
4 tsp mild curry powder
2 tsp turmeric
Salt
Peppercorns
1 handful of fresh coriander leaves, chopped
Method:
Wash tripe and trotters thoroughly. Cut tripe into pieces and simmer in a little water in a pot for 1 hour. Add trotters, salt and peppercorns.
Simmer slowly for about 6 hours so that the tripe and trotters become soft. Make sure the meat does not dry out and add more water when necessary.
When the meat is tender, add onions and add the ground spice, curry powder, cloves, ground coriander, turmeric, sugar and vinegar together and add to the pot.
Simmer for a further 40-45 minutes, adding water if necessary to avoid burning. Add the sugar beans and simmer. Once finished, add chopped coriander for garnish.
