Ingredients
4 tablespoons olive oil
1 large onion finely chopped
2 cloves crushed garlic
1 teaspoon mustard seeds
10 curry leaves
1 can chopped tomatoes
2 cans drained chickpeas
1 tablespoon chop chillies
Chopped Coriander
Method: Chilli Chickpeas
- Heat the 4 tablespoons of olive oil in a saucepan.
- Saute the 1 finely chopped onions.
- Add garlic,mustard seeds and curry leaves to the sauted onions.
- Satue onions, garlic, mustard seeds and curry leaves till its fragrant.
- Add the tomatoes and simmer for 10 minutes.
- Season the chickpeas and chillies with salt and pepper and cook gently for 5 minutes.
- Place the chops into the saucepan with the coriander and gently the cook through.
Method: Pork Chops
- Rub 4 pork chops with olive oil.
- Season the chops with salt, pepper and cumin.
- Heat a frying pan with oil.
- Fry the chops until golden brown.
- Coat the chops with the chilli chickpea sauce.
