Ingredients 

4 tablespoons olive oil

1 large onion finely chopped

2 cloves crushed garlic

1 teaspoon mustard seeds

10 curry leaves

1 can chopped tomatoes

2 cans drained chickpeas

1 tablespoon chop chillies

Chopped Coriander

Method: Chilli Chickpeas

  1. Heat the 4 tablespoons of olive oil in a saucepan.
  2. Saute the 1 finely chopped onions.
  3. Add garlic,mustard seeds and curry leaves to the sauted onions.
  4. Satue onions, garlic, mustard seeds and curry leaves till its fragrant.
  5. Add the tomatoes and simmer for 10 minutes.
  6. Season the chickpeas and chillies with salt and pepper and cook gently for 5 minutes.
  7. Place the chops into the saucepan with the coriander and gently the cook through.

Method: Pork Chops 

  1. Rub 4 pork chops with olive oil.
  2. Season the chops with salt, pepper and cumin.
  3. Heat a frying pan with oil.
  4. Fry the chops until golden brown.
  5. Coat the chops with the chilli chickpea sauce.
