Garlic and chicken Rice Recipe

Serves 4
2 cups rice
3 tablespoons Japanese mayonnaise
2 tablespoons butter
5 garlic cloves, finely chopped
2 medium chicken breasts cut into small blocks
1½ tablespoons soy sauce
2 eggs, lightly beaten
3 spring onions finely chopped
1 tablespoon finely chopped parsley
salt to taste.
1. Place the rice in a sieve and rinse under cold running water.
2. Transfer the rice to a large bowl, cover with cold water and soak for 30 minutes.
3. Drain the rice well before transferring to a saucepan with  2¼ cups of water and salt to taste.
4.Cook till almost tender.
5.Strain the rice and stir in the mayonnaise.
6. Heat the butter over medium-high heat in a large frying pan.
7.Add the garlic and stir-fry for a minute.
8.Add the chicken and stir-fry for another 2 and a half minutes.
9.Add the soy sauce and rice and toss until well combined.
10.Move the rice to one side of the pan and add the eggs into the empty side.
11.Cook the eggs till they are almost set.
12.Add the spring onions and parsley and eat.
