A delicious Mexican dish to fill a big family, why not try it today, it is Taco Tuesday after all!
Ingredients:
- Ground beef
- 2 cloves of garlic chopped
- salt and pepper to taste
- 1 teaspoon of curry powder
- half an onion chopped
- 1 and a half cups of water
- Taco seasoning mix
- 5 flour tortillas
- 1 can of corn
- 2 cups of cheddar cheese
- 1 bag of corn chips
- 2 tablespoons of chopped olives (Optional)
Method:

Preheat oven to 350 deg. Spray or line a glass dish with cooking spray/butter

Step 2
Heat a large pan over medium-high heat. Add onion and brown, cook and stir beef in the hot skillet until almost browned and crumbly, about 5 minutes. Mix water and seasoning together and add to the beef and onion mixture; simmer until water evaporates. Add garlic and curry powder and allow to cook for another 5 minutes.

Line the prepared baking dish with tortillas and top with 1/2 of the ground beef mixture. Spoon 1/2 of the corn over the beef layer and top with 1/3 of the Cheddar cheese. Crush tortilla chips over cheese layer. Repeat layers with remaining ingredients, ending with Cheddar cheese, tomatoes, and olives.

Bake in the preheated oven until heated and cheese is melted for about 15 minutes and serve hot
