
Ingredients
- 2 tablespoons of unsalted butter
- 1 Onion, chopped up
- 450 g Beef, cubed
- 2 Tablespoons of flour, seasoned with Salt and Pepper
- 450 g Pumpkin, cubed
- 1 Large Potato, peeled, and cut up
- 1 can of chopped tomatoes
- 1 teaspoon of sugar
- 1 cup of beef stock
- 1/2 t Dried Thyme
- Parsley or coriander to garnish
Instructions
1.) Heat the butter in a large pot and sauté the onions until nice and soft
2.) Dust the beef cubes with the seasoned flour and add to the onions and brown altogether
3.) Add the Pumpkin, Potato cubes, Tomatoes, Sugar, Stock, and Thyme – bring to the boil then reduce heat and simmer 25 – 30 minutes or until the vegetables are cooked – add a little water if needed halfway through cooking to the thickness that you want
