Make Spinach, Feta & Salami parcels with Chef  Jenny Morris
What you will need:
Makes 6
1 x 400g roll puff pastry
4 tablespoons crumbled feta
6 tablespoons ricotta cheese
3 spring onions finely chopped
2 cloves finely crushed garlic
Salt and pepper to taste
6 tablespoons cooked chopped spinach
1 egg yolk
6 slices salami or ham (optional)
1 extra egg beaten for glazing the pastry.
Method:
1. Pre Heat the oven 180 degrees celsius.
2. Mix the feta, ricotta, spring onions, garlic salt, pepper and spinach together.
3. Set aside the mixture.
4. Lightly flour a flat surface.
5.Place the defrosted pastry onto the lightly floured surface.
6.Divide the pastry into 6 square portions.
7.Paint a small amount of  beaten egg around the edges of the 6 square pastry portions.
8.Place a piece of ham or salami  in the centre of each square.
9.Top each square with a generous spoonful of the set aside mixture.
10.Pull up two of the sides and let one side overlap.
11.Paint each square with beaten egg.

11.Bake for 30 minutes on 180 degrees until golden and crisp.
