Recipe for Jenny Morris Cheesy Potato Cakes
Makes 10 to 12 cakes
• 750g potatoes washed and coarsely grated
• 1 small red onion, coarsely grated
• 1 cup coarsely grated cheddar cheese
• 2 cloves finely grated garlic
• 1 chillie finely chopped
• 1 tablespoon chopped coriander
• 50g self-raising flour
• 2 eggs, lightly beaten
• Olive oil for frying
1. Place the coarsely grated potato and onion mixture in a bowl and mix together well.
2. Place the mixture in a clean cloth and squeeze out all  the excess liquid.
3. Transfer the mixture  into a large bowl and add the remaining ingredients.
4. Stir well to combine all the ingredients.
4. Divide the mixture into equal portions and pat down to flatten.
5. Heat the  olive oil in a large frying pan and fry the cakes in batches. – till golden and crispy on both sides.

6. Serve with whipped cream cheese.

Topping Ingredients 
• 1 cup cream cheese
• 1/ 2 cup chopped spring onions
• 1/2 cup chopped crispy bacon
Topping Method
1. Place all the ingredients into a bowl.
2. Stir and combine all the ingredients.
2. Season to taste with salt and pepper.
