Ingredients:
- 100ml self raising flour
- 750ml cake flour
- 250ml cold water
- 5ml salt
- 45ml sunflower oil
- 100ml butter
- 100ml flour
- 50ml melted butter mixed with 50ml sunflower oil
Method:
- Combine flour, self raising flour, and salt in a bowl
- Add oil rubbing it into flour to form a crumbly texture
- Add water and mix
- Knead while adding extra flour
- Leave to rest for 30 min, covered
- Divide dough into 7-8 pieces
- Roll each one out on a floured surface to a circle, dot it with butter and sprinkle with flour
- Roll and stretch into thick ropes of dough
- Roll up both ends of the ropes, one side clockwise, other side anti-clockwise and fold one half flat on top of the other
- Allow to rest for 1 hour, covered
- Heat your pan
- Roll out your roti’s into circles, on a lightly floured surface
- Fry your roti’s one at a time, turning occasionally and brush with melted butter
- Fry until golden brown and serve with curries
