Ingredients:
- 1 large onion sliced
- 30ml sunflower oil
- 1 chilli
- Salt to taste
- 500ml of rice
- 10ml of crushed ginger
- 5ml of crushed garlic
- 5ml cumin (grounded)
- 5ml of ground coriander
- 5ml of ground fennel
- 5ml of tumeric
- 5ml chilli powder
- 3 whole allspice
- 3 whole cloves
- 3 cardamom seeds
- 2 pieces of stick cinnamon
- 1 tomato grated
- 4 potatoes halved
- 200 ml water
- 60 ml of chopped coriander
Meat:
- 800 g of mutton cubed
Method:
- Boil the rice in a pot, add salt until soft. Rinse and drain
- Heat some oil in a large pan and brown your onions until golden (about 5-10 minutes)
- Add the mutton and spices and cook through. Cover the pan over medium heat until meat is tender
- Add the tomato, potatoes and water, and cook till potatoes are nearly soft
- Add rice, tossing through with a fork
- Steam, tightly covered, over low heat for a further 20 minutes
- Sprinkle with coriander and serve with a salad
