Ingredients:

  • 1 large onion sliced
  • 30ml sunflower oil
  • 1 chilli
  • Salt to taste
  • 500ml of rice
  • 10ml of crushed ginger
  • 5ml of crushed garlic
  • 5ml cumin (grounded)
  • 5ml of ground coriander
  • 5ml of ground fennel
  • 5ml of tumeric
  • 5ml chilli powder
  • 3 whole allspice
  • 3 whole cloves
  • 3 cardamom seeds
  • 2 pieces of stick cinnamon
  • 1 tomato grated
  • 4 potatoes halved
  • 200 ml water
  • 60 ml of chopped coriander

Meat:

  • 800 g of mutton cubed

Method:

  • Boil the rice in a pot, add salt until soft. Rinse and drain
  • Heat some oil in a large pan and brown your onions until golden (about 5-10 minutes)
  • Add the mutton and spices and cook through. Cover the pan over medium heat until meat is tender
  • Add the tomato, potatoes and water, and cook till potatoes are nearly soft
  • Add rice, tossing through with a fork
  • Steam, tightly covered, over low heat for a further 20 minutes
  • Sprinkle with coriander and serve with a salad
