Ingredients:
- 500g prawns
- 1 1/2 cups of coconut milk
- 1 cup of water
- 1-3 tablespoons green curry paste
- lime leaves
- 100g of sugar snaps
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 2 teaspoons of grated lime rind
- 2 teaspoons of sugar
- 1 cup of fresh coriander
Method:
- Peel the prawns and clean
- Heat coconut milk and water in a pan or wok over medium heat
- Add curry paste, lime leaves and sugar snaps to the pan
- Bring to a boil
- Add prawns to the pan and simmer for 5 minutes until prawns are cooked
- Add fish sauce, lime juice, sugar and lime rind
- Sprinkle with coriander and serve with rice
