Ingredients:

  • 500g prawns
  • 1 1/2 cups of coconut milk
  • 1 cup of water
  • 1-3 tablespoons green curry paste
  • lime leaves
  • 100g of sugar snaps
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 2 teaspoons of grated lime rind
  • 2 teaspoons of sugar
  • 1 cup of fresh coriander

Method:

  1. Peel the prawns and clean
  2. Heat coconut milk and water in a pan or wok over medium heat
  3. Add curry paste, lime leaves and sugar snaps to the pan
  4. Bring to a boil
  5. Add prawns to the pan and simmer for 5 minutes until prawns are cooked
  6. Add fish sauce, lime juice, sugar and lime rind
  7. Sprinkle with coriander and serve with rice
