Ingredients:
-
12 apples small
-
4 cups sugar
-
1 tsp white vinegar
-
1 cup water
-
1/3 cup corn syrup
-
1 tsp red food colouring
Method:
-
Line an oven tray with greased baking paper.
-
Stick wooden skewers into apples at stalk end about halfway through
-
Rinse apples under cold running water and stand on wire rack to dry. Do not wipe apples dry, they must be completely dry before coating.
-
Put sugar, white vinegar, water and corn syrup into a large pan and stir over a low heat until sugar dissolves.
-
Bring to the boil and boil without stirring until it turns a pale honey colour. Toffee will make a cracking sound when ½ teaspoon is tested in cold water.
-
Remove from heat and allow bubbles to subside.
-
Stir in the food colouring.
-
Tilt saucepan to one side and swirl apples in toffee, coat completely.
-
Remove apples from the toffee and twirl in a jug of cold water to set toffee.
