Ingredients:

  • 12 apples small
  • 4 cups sugar
  • 1 tsp white vinegar
  • 1 cup water
  • 1/3 cup corn syrup
  • 1 tsp red food colouring

Method:

  1. Line an oven tray with greased baking paper.
  2. Stick wooden skewers into apples at stalk end about halfway through
  3. Rinse apples under cold running water and stand on wire rack to dry. Do not wipe apples dry, they must be completely dry before coating.
  4. Put sugar, white vinegar, water and corn syrup into a large pan and stir over a low heat until sugar dissolves.
  5. Bring to the boil and boil without stirring until it turns a pale honey colour. Toffee will make a cracking sound when ½ teaspoon is tested in cold water.
  6. Remove from heat and allow bubbles to subside.
  7. Stir in the food colouring.
  8. Tilt saucepan to one side and swirl apples in toffee, coat completely.
  9. Remove apples from the toffee and twirl in a jug of cold water to set toffee.
