Basic Bread Dough Ingredients 

4 cups cake flour
2 tsp salt
4 tsp sugar
10 g instant yeast
1 Tbs olive oil (sunflower will do)
400 ml lukewarm water
Method
1.Place all the dry ingredients into a bowl and make a well in the centre.
2.Add the oil and three quarters of the water, and mix to form a soft dough.
3.Add a little more water if need be; if it is too wet, add a small amount of flour.
4.Knead the dough until it is smooth and elastic to the touch; about 15 minutes.
5.Place the dough back into the bowl and oil the top; cover with a clean cloth and place it in a warm place to rise to twice its size.
6.Punch the dough down and  divide into 2 balls.
7.Roll the balls out into a circle
8.Spread the the curried Mince onto the dough leaving a  3 cm border.
9.Add grated cheese and chopped chilli and extra coriander to this.
10.Cover the mince with the remaining dough  and press the edges together to seal.
11.Heat some oil in a large frying pan that can be used in the oven and brown the pie on one side, turn it over and brown on the second side.
12. Bake for 25 to 35minutes in a preheated oven when it’s golden and crisp.

Curried Mince Ingredients

 6 garlic cloves, finely grated

1 tablespoon vegetable or olive oil

1 large onion, finely diced

10 curry leaves

500g lean beef mince

 1 tablespoon grated ginger
 1 teaspoon ground cumin
 2 tablespoons  curry powder
 1 / 2 teaspoon ground cinnamon
 ½ teaspoon chilli powder
 2 tomatoes grated
 1/2 cup stock of your choice
 Fresh coriander
 Salt and pepper to taste
Method
 1. Heat the oil in a saucepan  and fry the onion and curry leaves for 2-3 minutes until it is translucent.
 2. Add the mince and fry it for 4-5 minutes or until the pink  has gone
 3. Stir in the garlic and ginger and continue to cook for another minute until fragrant, now add the spices and keep stirring until the mix is fragrant, add the tomatoes and stock and simmer gently for 20 minutes.

4. Taste and adjust the seasoning stir in the coriander and cool the mixture down..
