The Perfect Steak with Nectarine and Chilli Salsa by Jenny Morris.

 Steak Method:

1. Remove the steak from the fridge and bring it to room temperature before cooking it.

2. Coat the steak in a little olive oil on both sides.

3. Season with  both sides of the steak with plenty of salt and pepper.

4. Heat a frying pan and cook your steak according to the way you like it.

(Rare….1 1/2 minutes per side)

(Medium-rare…2 minutes per side)

(Medium ….2 1/4 minutes per side)

(Well done…4 to 5 minutes per side)

 

Nectarine and Chilli Salsa Ingredients:

x3 Nectarines finely diced

x2 firm tomatoes finely diced

x1 small red onion finely diced

x2 cloves grated garlic

x1 small handful  of chopped coriander

x1 small handful of chopped mint

x5 red chillies finely diced

x1 teaspoon ground cumin

x 1/2 cup olive oil

A squeeze of lemon

Salt and pepper to taste

Method:

Stir all the listed ingredients together and serve.
