What’s cooking this week in Jenny’s Kitchen…
CHEATS CANNOLI RECIEPE
INGREDIENTS
- 2 Cups of Self- raising flour
- 2 Eggs
- 250 ml Milk
- 250 ml Sparkling Water
- 1.5 cup of Oil
METHOD
- Beat 2 eggs, 250ml of milk, 250ml of sparkling water, 1.5 cup of oil and 2 cups of self-raising flour in a bowl.
- Rest the mixture for 30 minutes.
- Heat a non- stick frying pan.
- Ladle a little batter into the frying pan.
- Cook the batter for about 2 minutes on each side, until you see the top covered with little bubbles.
- Repeat steps 1-5 until you have cooked all the batter.
Now let’s fill these with some sweet or savoury fillings. Here are a few fillings to try out!
Something Savoury
- Pulled pork or pulled chicken with slaw, spinach, feta and BBQ mayo.
- Snoek Pate, gherkins and salad leaves.
- Smoked trout, beetroot, rocket and cream cheese.
- Avocado cream cheese, sticky rice, feta, chilli and Japanese mayo.
Something Sweet
- Ricotta cheese, caramelised apples, and honey coated with mixed seeds.
- Berry coulis, thick greek yoghurt and toasted almond flakes.
- Milk tart custard, honey and cinnamon.
- Cream cheese frosting coated with toasted mixed nuts.
- Nutella and raspberries.
