Ingredients:
- 1kg beef mince
- 1 med onion finely chopped
- 2 eggs
- 3 cloves crushed garlic
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 3 Tablespoons tomato sauce
- 3 Tablespoons chopped parsley
- 3/4 cup breadcrumbs
- 1/2 cup natural yoghurt
- 1 teaspoon salt or to your taste
- 2 teaspoons oregano
- 1 Tablespoon chopped fresh rosemary
- 1/2 teaspoon ground black pepper
- 1 tsp paprika
- 1/2 teaspoon chillie powder
Meatloaf Sauce:
- 1/2 cup tomato sauce
- 1/2 cup chutney
- 1 tablespoon vinegar2 ½ tablespoons brown sugar
- 1 teaspoon crushed garlic ground black pepper and salt to taste
- Stir together the all the ingredients
Method:
- Preheat oven to 180 deg C
- Line a 1kg loaf pan with greaseproof paper.
- Place all the ingredients for the meatloaf into a large bowl, mix together well.
- Fill the loaf tin with the meatloaf mixture and press it down and spread evenly in the tin.
- Place in the oven and bake for 30 minutes, remove from the oven and gently lift out if the loaf tin.
- Place into an oven proof fish, spoon over the sauce and bake for another 15 minutes.
- Remove from the oven and rest before slicing. Serve with mashed potatoes and peas or vegetables of your choice.
