Ingredients:
  • 1kg beef mince
  • 1 med onion finely chopped
  • 2 eggs
  • 3 cloves crushed garlic
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 3 Tablespoons tomato sauce
  • 3 Tablespoons chopped parsley
  • 3/4 cup breadcrumbs
  • 1/2 cup natural yoghurt
  • 1 teaspoon salt or to your taste
  • 2 teaspoons oregano
  • 1 Tablespoon chopped fresh rosemary
  • 1/2 teaspoon ground black pepper
  • 1 tsp paprika
  • 1/2 teaspoon chillie powder
Meatloaf Sauce:
  • 1/2 cup tomato sauce
  • 1/2 cup chutney
  • 1 tablespoon vinegar2 ½ tablespoons brown sugar
  • 1 teaspoon crushed garlic ground black pepper and salt to taste
  • Stir together the all the ingredients
Method:
  1. Preheat oven to 180 deg C
  2. Line a 1kg loaf pan with greaseproof paper.
  3. Place all the ingredients for the meatloaf into a large bowl, mix together well.
  4. Fill the loaf tin with the meatloaf mixture and press it down and spread evenly in the tin.
  5. Place in the oven and bake for 30 minutes, remove from the oven and gently lift out if the loaf tin.
  6. Place into an oven proof fish, spoon over the sauce and bake for another 15 minutes.
  7. Remove from the oven and rest before slicing. Serve with mashed potatoes and peas or vegetables of your choice.
