Easy butternut soup recipe 


  1. One medium-sized butternut squash
  2. Two tablespoons of olive oil
  3. One large red onion,
  4. diced Two garlic cloves,
  5. 1 cup of water
  6. Salt Black pepper Thyme


Peel and dice the butternut into small pieces. Place the butternut pieces in a large bowl and set it aside.

  1. Heat olive oil in a heavy pan over medium heat.
  2. Add garlic and onions. Cook for about five minutes or until the onions soften.
  3. Add the diced butternut squash and half a cup of water.
  4. Cover and boil until the butternut squash becomes soft.
  5. Add salt and pepper to taste.
  6. Pour the butternut sauce into a blender. Blend until it is smooth.
  7. Garnish with thyme and serve with bread.
